Catering Management
The course includes an in-depth analysis of all components of the catering profession including management, legal aspects, getting started in business, catering contracts, menu planning, beverage service, catering equipments, catering logistics, human resources, marketing, pricing, sanitation, safety, purchasing, accessory services, weddings, Kosher catering, theme events, and accounting and budgeting. Students are given the opportunity to cater an actual event and attend field trips to catering facilities.

Club Management
This class is designed to enlightened students regarding the excellent opportunities that abound in the field of private club management. Prominent local club managers guest lecture, and field trips are offered to some of the top country club and city clubs in the areas. Careers in club management are lucrative and rewarding.
Biography
Bill has a B. S. from the School of Hotel Administration at Cornell University, and a M. S. from the School of Hospitality and Tourism Management at Florida International University. He owns Bills' Catering, one of South Florida top off-premise catering firms. Since 1980 Bills' Catering has provided upscale foodservice for weddings, corporate events and even Pope John Paul II and Presidents Reagan and Bush. In 1995 Bill founded Leading Caterers of America which is this nation's top web site for caterers and clients who are seeking catering services.
Since 1990 Bill has taught Catering Management. In 1995 due to his extensive background in managing private clubs, Bill took on the additional responsibility of teaching Club Management. Bill and his students opened Crossroads in 1999 as a first-of-it's kind private on campus club for students, faculty, staff and alumni at FIU.
