Courses Offered and Course Description

HFT 3003
Introduction to Hospitality and Tourism Management
This is a survey course providing an overview of the hospitality and tourism industries, their history, problems, and general operating procedures. Operating executives from the fields of hotel, restaurant, foodservice, travel, and tourism will be featured periodically.

HFT 3453
Operations Control

This course provides a study of the uniform system of accounts for the Lodging Industry and teaches the management tools available to control sales and expenses within hospitality operations. Detailed analysis of the responsibility centers using the cost management approach. Case problems provide students the opportunity to develop control systems for lodging and food service organizations. Prerequisite: HFT 3403.

HFT 4240
Managing Service Organizations

This course provides an in-depth study of issues related to service and quality assurance in the service industry. It examines the linkages to marketing, operations and human resources. It is the capstone course for the undergraduate programs and is for students who have attained the senior level only. Prerequisites: HFT 3210 and HFT 3503.

Leadership in the Hospitality Industry
This course introduces the student to the fundamentals of leadership and basic leadership skills for organizational success. Prerequisite: Graduating Senior

HFT 4945
Advanced Internship in Hospitality/Tourism Management
The Advanced Internship is a practical hospitality/tourism work experience structured to provide exposure to management and training functions, job rotation tasks and/or projects not previously performed. Minimum 300 hours/ten weeks field experience. Prerequisites: Documented completion of 1,000 hospitality related work hours of which 500 hours must be completed while enrolled at FIU. Permission of an advisor.

HFT 6226
Leadership and Motivation in the Hospitality Industry

This course designed to maximize the motivational and management skills for leadership. Effective leaders and managers develop a symphony of seemingly contradictory skills, which complement and support one another. Interpersonal skills will be utilized. Both personal and professional skills will be assessed, learned, analyzed, practiced and applied. Additional management emphasis will be placed on the study of leadership and the differences between leadership methods. Emphasis will be on experiential learning in the classroom. Other methods used include lecture, class discussion, case studies, videos, and guest lectures.

HFT 6246
Organizational Behavior in the Hospitality Industry
This course analyzes the study of human behavior in organizational settings, the interface between human behavior and the organization, and the organization itself.  Thus, organizational behavior reflects several levels of analysis and a wide variety of interactions among these levels.

HFT 6946
Graduate Internship
Structured hospitality practical training work experience involving training program and job rotations not previously performed. Ten week/300 hour minimum. Report and management project required. Prerequisites: Documented completion of 1000 hospitality related work hours of which at least 500 hours must be completed while enrolled at FIU. Permission of the instructor.

 

Biography

Steven Moll has been a member of the faculty of the School of Hospitality and Tourism Management for the past 30 years as a teacher of accounting, finance, operations management, management, and leadership courses. In addition he was primary academic advisor for the School for 15 years. Currently he is the Director of the College of Business Administration at the Biscayne Bay Campus.

Professor Moll has taught internationally in Aruba, Costa Rica, Switzerland and Taiwan. In addition, he has conducted numerous seminars for the hotel, restaurant and health care industries. Most recently he presented lectures to the National Association of Purchasing Managers and the Academy of Travel and Tourism.

Professor Moll is currently the past-president of Florida/Caribbean CHRIE and was recently named to the Board of Governors of Eta Sigma Delta, the International Hospitality and Tourism Honors Society.

Professor Moll has been recognized two times by the University for excellence in Undergraduate Advising and in 2001 received the Excellence in Teaching Award. Additionally he is a recipient of the Teaching Incentive Program (TIP) Award. He serves on numerous University committees and for five years chaired the University's Commencement Committee. He is a member of the International Council for Hotel, Restaurant and Institutional Educators (I-CHRIE), the National Restaurant Association (NRA), and the American Hotel & Motel Association (AH&MA).
