Courses Offered and Course Description

HFT 3862L
Wines of France and Italy

A survey of the wines of France and Italy ; French and Italian wine grape varieties; the most common methods of wine production and French and Italian wine classification systems.  Prerequisite: Must be 21 years or older.

HFT 3865
Wine of the New World
An examination of the vineyard practices and wine making techniques of the principal wine growing regions of the new World (i.e., California, Washington, Oregon, Chile, Argentina, New Zealand, Australia and South Africa).

Wine and Culture
A survey of the legendary old world and new world wine regions with a special emphasis on the cultural background that enabled these vineyards to develop and flourish.  Prerequisite:  Must be 21 years or older.

HFT 6863
World of Wine and Food
An intensive  study of wines from around the world and how they pair  with foods.  Guest chefs will prepare tapa size portions of  food to be paired with local and specific wines.   Prerequisite: Must be 21 years or older.

Biography

William Pelzer is the Florida Marketing and Sales Representative for the specialty wine importer Robert Chadderdon Selections, Inc. He works with retailers and restaurants throughout the state to focus their attention on the artisanal wines of France , Italy , Germany , Portugal and Hungary . Previously he was the General Manager for Diamond Oaks Vineyard a Boutique California winery with vineyard holdings in Napa and Sonoma . Prior to working in California he was a vice-president of Vintage Imports a firm which specializes in importing old vintage Bordeaux and Burgundy wines. During his tenure at Vintage Imports he traveled frequently to London buying wines at Christy's and Sotheby's Auction Houses. He has taught wine courses for the University of Florida Adult Extension Program . He has also written several wine articles for South Florida Gourmet Magazine.
