Grand Tasting Critical Information, Dates and Times
Who: Each exhibiting restaurant may bring 4 employees to work at the Grand Tasting
What: South Beach Wine & Food Festival Grand Tasting Village
Where: 10 th street and Ocean Drive – on the beach!
When: Saturday February 23 rd and Sunday February 24 th
Load In - 8 am - 11 am
Grand Tasting - 1 pm - 5 pm
Load Out - 5 pm - 7 pm
Registration Information
Each restaurant may bring 4 employees to the tasting. Please submit the names of these employees via e-mail to Gina.DiCarlo@gmail.com . Names may be submitted as late as Friday, February 16, 2007. However, we would appreciate the names as soon as possible.
No one will be admitted into the tent without a credential. Each employee must present a valid, photo identification.
A restaurant employee registration table will be set up at the south end (10 th St. Entrance) of the American Express Grand Tasting Village.
Load In
Restaurants may load in between 8 am and 11 am on Saturday or Sunday morning, Load in should be conducted as follows:
- Deliver food, equipment and table decorations through entrance on 10 th St. Delivery vehicles will be directed to park in our staging lot, just west of Ocean Drive. Our Service Coordinators, driving golf carts, will carry all items from staging lot to American Express Grand Tasting tent and assist with table set up. (We have a lot of restaurants to load in, so please plan on your staff doing most of the set up.)
- Restaurant employees will stop at the restaurant registration table at the south end of the American Express Grand Tasting tent to exchange tickets for credentials. All employees must be pre-registered (use attached form) and/or must possess a ticket. Also, each employee must present a valid, photo identification to receive a credential.
- Delivery vehicles must be removed from staging area QUICKLY, 20 minute. No one will be permitted to park delivery vehicles in the staging area. Each restaurant will receive a parking permit for one (1) vehicle for the 17 th street parking lot.
Storage and Prep Kitchen
We provide ample cold storage on site. Please contact your Restaurant Coordinator to reserve cold storage.
A complete prep kitchen is located on site. We have burners, ovens, a fryer, prep tables and cold storage.
We do NOT provide small wares, such as pots, pans, knives, etc.
There is a grill area just south of the American Express Grand Tasting tent. Please notify us if you would like to use a grill. No one may use a grill without a reservation.
Parking
We cannot accommodate trucks in our parking lot. If you are planning to bring a large truck, please make arrangements to park it elsewhere.
We cannot accommodate any trucks with more than 2 axles in either the staging lot, or the parking lot.
Each restaurant will receive one parking permit for the 17 th street lot. This lot can accommodate cars, vans and pick-up trucks.
Grand Tasting Rules
The Grand Tasting begins promptly at 1 pm. All restaurants MUST be ready by 12:30 pm. No restaurant employee should begin serving food until AFTER the Festival opens at 1 pm.
Restaurants should PACE their food service. No restaurant should run out of food until the end of the Festival. If you are going through your food too quickly, please stop serving for a short time. It is better to tell a guest you will be serving food in twenty minutes than to run out and look bad.
IMPORTANT!!! There are four important rules for the Festival.
• No propane inside the tent.
• No grilling inside the tent
• Each restaurant must bring a fire extinguisher
• No table decorations more than 30 inches above the table height and NO backdrops.
Breakdown and Load out
No restaurants should break down until the Festival closes at 5pm. At that time, Service Coordinators with golf carts will assist you to the staging lot. Delivery vehicles will be admitted to the staging lot on a space available basis. Please contact your Service Coordinator to make special arrangements.
Delivery vehicles should use the 10 th street entrance to enter and leave the staging lots. Please be patient. Everyone wants to leave at the same time!
We anticipate that it will take no more than 1 hour for the complete load out.
