PODs (Programming on Demand) are one credit, intensive courses generally offered for 15 hours either over a weekend or online. Three one-credit PODS equal one three-credit elective. Join event and meeting planners in their largest gathering in this hemisphere, regularly attracting over 13,000 professionals to the program. Students attending may participate in the “Future Leaders Forum”, a two-day workshop for the top students studying event planning and conducted by leaders in Meeting Professionals International.
You also have the opportunity to attend a Monday of activities coordinated by MPI, and an additional day on Friday where we will be given exclusive tours of MGM Special Events warehouse and the huge GES warehouse which coordinates many of the trade shows in Las Vegas (both tentative, based on student numbers).
The Monday workshops, the IMEX conference and Friday’s tours are all without registration cost, leaving four primary costs for participating students – 1) airfare to Las Vegas, 2) hotel accommodations (which we have generally been able to keep low through students sharing rooms with another student), and 3) a share of the van rental, which allows for airport pick-up and drop-off, as well as transportation of the group to off-site locations.
The fourth cost is the charge for POD credit by FIU. Students may also attend without POD credit, if they so choose.

Catering @ American Fine Wine Competition

This practical, experiential POD will give students hands-on experience and first-hand knowledge of the catering industry, and how to cater for a multi-day event.
This POD will be conducted by Chef John Masi during the American Fine Wine Competition, the premier All-American wine invitational in the country, taking place at the Wine Spectator Restaurant at the Chaplin School of Hospitality.
Over the course of 3 days, students will participate in food preparation and cooking for catering the wine competition, as well as get exposure to foodservice operations, such as menu development, and production flow. Students will also gain experience in front of the house while assisting with service.
Wine Event Management @ American Fine Wine Competition

This dynamic, interactive POD will give students hands-on experience and first-hand knowledge of the wine industry, and how to run a world-class wine competition.
This POD will be conducted by the American Fine Wine Competition, the premier All-American wine invitational in the country. Over the course of 5 days, students will be able to network with leaders of the industry, learn and taste different wine varietals, help execute a wine competition, discover different career possibilities in the hospitality industry, while assisting in conducting the 15th annual American Fine Wine Competition, taking place at the Wine Spectator Restaurant at the Chaplin School of Hospitality.

Diversity and Inclusion in the Hospitality Industry
Spend two nights in Islamorada on the world’s 3rd largest barrier reef and learn first-hand about how to balance marine tourism with conservation and preservation of the reef and ocean. This POD provides a measure of financial literacy and defines the root causes and common outcomes of financial fragility. This POD will illustrate the financial value of educational attainment in career fields of hospitality, business, and other professions with regard to employment and income-earning capacity in building financial capability.
Social Justice and the Tourism Industry
This POD will examine what effects social injustice plays within the Hospitality and Tourism industry. We will define and identify the roles that different types of power, privilege and oppression play within the Hospitality and Tourism space. Also, we will redefine what it means to be socially just within the service industry, not only to the treatment of our guests but also of the workforce. Does the Hospitality and Tourism industry owe it to the world to re-examine itself when it comes to representation and authenticity within its tours and experiences?
Building Brand Standards
A hotel room is about a lot more than clean sheets and a bed. In this exercise, you will have a chance to run a hotel company, create the culture, and then design a guestroom that embodies those ideas. We will be exploring what Brand Standards are, how they are designed, and create our own. By the time you have finished this exercise, you will be prepared to walk into any public space and dissect the brand reasoning for including everything in that space. Get ready to move your hospitality dreams from ideas to reality as you build your own brand standards book.
Helping Jobs in the Events Profession
This POD will examine the point where the events profession meets the helping profession. This POD is geared towards students interested in contributing to their communities while doing what they love – events! We will explore how non-traditional non-profit venues like cultural institutions (museums, theaters, historical sites, etc.) use events as a source of vital revenue supporting their overall missions. We will explore other professions like fundraising, sponsorship, marketing and PR from the helping perspective and meet real-life professionals from these fields. We will analyze a sample fundraising event from idea conceptualization to final debrief and students will be able to create their own fundraising/awareness events.

Tourism is complex? Unpacking how marginalized groups travel and are marketed globally
Explores the historic and current socio-cultural impacts of tourism on marginalized travelers (i.e. Black, Indigenous, people of color, solo-female travelers, people with disabilities, and LGTBQ+). Understand the complexities of tourism relationships from the host community and tourist perspective. Identifying the power dynamics within tourism planning and development of a tourism destination based on the marketing/advertising strategies analyzing how destinations market to these groups through travel websites and social media. Emphasis on the study of both historic and current socio-cultural impacts of tourism including the positive (empowerment) and negative (over-tourism) influences of social media.

The Fontainebleau Xperience is designed to give students a hands-on understanding of the Hospitality Industry, specifically in Hotel Operations Management. This program covers a wide range of content, from Rooms Operations to Food and Beverage and Culinary services, to Finances and Marketing. Students will have the opportunity to gain knowledge and hands-on experience within multiple facets of a successful and fully operational Hotel.
Wholesaler – From Barrel to Bar
This experiential POD will take students on technology-enabled restaurant sales and marketing calls, educate them on the back-office order-to-cash process, and expose them to a highly automated the pick, pack and ship process in a 1 million square foot distribution center.
SOBEWFF® Culinary Boot Camp
This course is to prepare students for a culinary role at the South Beach Wine and Food Festival. Students will learn basic knife skills, time management and prep lists as well as get familiarized with the different culinary positions and events at the festival.
Hospitality Leadership in Las Vegas
Spend 3 nights in Las Vegas, Nevada and explore hospitality with several behind-the-scenes opportunities. Meet with management from Caesars Entertainment and go on a behind-the-scenes tour of Caesars Forum, the management staff at Bouchon by Thomas Keller. This POD will examine the process of conceptualizing a new event by analyzing a real-life event, Kids’ JAMM at PAMM, a new annual event developed and executed by the Pérez Art Museum Miami’s development and event teams. Lunch and parking included.

Spanish Wine Experience Certification Course. This is the most intensive and in-depth course available on the Spanish wine industry.
